NY Strip Steak
The NY strip comes from the short loin primal. (The loin primal is where the famously-tender filet mignon comes from.) So even though the NY strip steak is a somewhat tender cut of meat, it is mostly known for its intense, rich beefy flavor with a solid chew. The marbling throughout this cut makes it the perfect steak to grill. We recommend grilling on a super-hot grill to get a nice sear on both sides, then follow a cooking chart to achieve your desired wellness.
