Stewing Hens are whole, ready to cook chickens which were once Laying Hens running around our farm eating bugs and laying eggs. Cooking with them is a wonderful way to honor an animal that has given their all in life as an egg layer. Their meat is tougher, so they need to be cooked for longer periods of time to unlock the flavor of this nutritionally-dense meat. Stewing hen meat makes excellent stock and should be used for stews, soups, stock, broth, chicken & dumplings, etc. They will excel at making any dish where the chicken is cooked low and slow.

The simplest way to cook a stewing hen is to place it whole in a big pot (ideally a crockpot) with cut-up celery, carrots, onions, garlic cloves and peppercorns. Cover with water and cook on low for about 12 hours. You will end up with an incredibly tasty broth and tender meat.
